For this latest release, The GlenAllachie has turned to one of the most intriguing and elusive styles of sherry: Palo Cortado.

Originally discovered as something of a happy accident in the 19th century, Palo Cortado begins life as a Fino sherry. However, during maturation, the protective flor yeast naturally fades, triggering a shift towards oxidative ageing. The result is a rare and highly prized style that sits beautifully between Amontillado and Oloroso—combining the elegance and aromatics of the former with the richness, structure and depth of the latter.

It is this duality that makes Palo Cortado so compelling, and why it has become a favourite among connoisseurs.

The GlenAllachie Sherry Series Philosophy

Each whisky in The Sherry Series follows a carefully structured maturation journey. Spirit is first matured in American oak ex-Bourbon barrels before being transferred into a selected sherry cask type for secondary maturation.

For this release, the whisky has been finished in rare Palo Cortado sherry puncheons and hogsheads, sourced directly from trusted bodegas in the renowned sherry region of Cádiz, Spain. This meticulous approach allows the unique characteristics of each wood type to fully integrate with GlenAllachie’s richly flavoured spirit.

He adds that the combination of GlenAllachie’s natural heather honey character with Palo Cortado’s sweet, nutty complexity has created a whisky with an exceptional depth of flavour.

Tasting Notes

The influence of Palo Cortado sherry casks brings a beautifully layered profile to this 11-year-old Speyside single malt.

On the nose, expect warming cinnamon spice, butterscotch and damson plum, lifted by notes of heather honey, raisin butter and crystallised ginger. The palate unfolds with toasted honeycomb and fresh brambles, followed by baking spices, maraschino cherries, mocha and rich plum jam. A long finish of treacle and dark chocolate provides depth and lingering sweetness.

Bottling and Presentation

This expression is bottled at a robust 48% ABV, with natural colour and without chill filtration. This ensures the whisky retains its full character, texture and aromatic intensity, delivering an authentic representation of both spirit and cask influence.
